Mexican beef recipe


ingredients:

12 ounces pre-cooked shredded beef
2 cups of Masa Harina
2 tablespoons all-purpose flour, plus more for rolling dough
1 teaspoon baking powder
3/4 teaspoon salt, divided
1-2/3 cups of water
2/3 cup vegetable oil
1/4 cup fresh lemon juice
2 tablespoons of fresh orange juice
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 t ground coriander
1/2 t  garlic powder
1 Roma tomato, cut to cubes
1/4 c pickled jalapeno peppers
1/2 c of fried black beans

to cook:
In a large bowl, mix the masa harina, flour, bread strength, and 1/2 teaspoon salt. Slowly adding water to a soft dough is formed. Transfering dough to a floured surface. Knead by hand for 5 minutes, until dough becomes smooth. Cover with plastic and set aside.

Place dough on a lightly floured surface, and roll dough until it is 1/4 inch thick. Using a cookie or cookie cutter, cut into 2-1/4-inch circles. Re-roll rest dough, as needed, to make 24 circles. Heat a 10-inch cast-iron skillet over medium heat until hot; Add oil. fry about 5 min. shift once. Transfer the portions to a paper towel-lined plate. Seasoning with salt also pepper as required.

Meanwhile, in  saucepan, combine beef, lime juice, orange juice, cumin, salad chile, cilantro, garlic powder, and 1/4 teaspoon salt. Heat on  heat until hot, about 5 min remove from heat; Add tomatoes and jalapeno peppers. stay warm
Top each with the beans, then the beef mixture. Garnish with cheese and coriander as desired.
