Apple Crisp Bites


*Ingredients:

+OATMEAL COOKIE CRUST
°1 cup all-purpose flour
°1 cup rolled oats
°3/4 cups of brown sugar
°12 tablespoons softened butter
+FOR THE HOMEMADE APPLE TOPPING OPTION
°2 tablespoons of butter
°3-4 medium apples peeled, cored and cut into 1/4 inch cubes
°1/3 cup brown sugar
°3 tablespoons of water
°1 teaspoon of cinnamon
°1/8 teaspoon nutmeg
°1 tbsp + 1 tsp cornstarch
°2 tablespoons of water
+FOR THE CANNED APPLE TOPPING OPTION
°1 box apple pie filling
Optional caramel topping

*PREPARATION:

Preheat oven to 350 degrees F. Grease a 24 cup mini muffin pan.
In a medium saucepan, melt the butter, add the apples, spices, brown sugar and 3 tablespoons of water. Cook over medium-high heat for 4 to 6 minutes or until the apples are very slightly softened.
In a small dish, combine the cornstarch and 2 tablespoons of water. Add to skillet, stirring, and continue cooking until apples are tender and filling has thickened, about 4 to 5 minutes. Cool.
Combine flour, rolled oats and brown sugar in a large bowl. Cut the butter into the flour mixture with a pastry cutter until the mixture resembles coarse crumbs.
Place a heaping tablespoon of the crust mixture into a mini muffin pan. Press along the bottom and sides to form a "cup". There will remain the crust mixture.
Place about 1 tablespoon of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture over the filling.
Bake in preheated oven until golden brown, 15 to 20 minutes. Cool in pan for 10 minutes. Use a knife to loosen them from the mold and they should come out right away.
Drizzle with caramel topping if desired
